Abstract
Potatoes are one of the most widely produced agricultural products in the world, and their use in the food industry generates, annually, tons of waste in the form of potato peel. One way to enhance the value of this waste is through the extraction of metabolites which can be used in various industrial sectors. In potato peel, the most valued components are starch and phenolic compounds. Therefore, in this work, different solvents and extraction techniques were tested and compared, regarding the extraction of these compounds. The extraction of starch from potato peel with a saline solution increased the yield from 1.00% (% g/100g of dry potato peel), without NaCl, to 3.18% with 35 g/L of NaCl. Furthermore, the application of ultrasound treatment during the extraction of phenolic compounds allowed for an increase in the diversity of compounds extracted with methanol solutions. Thus, the results obtained through both methods enabled the valorization of potato peel waste.
